Robert Parker  Following the sale of the estate, the cellars at Cerbaiona have been refurbished to allow for softer punch downs instead of pump-overs. Estate Manager Matthew Fioretti is looking for less aggressive ways to work the caps of the delicate Sangiovese grape. I have found that Cerbaiona’s past vintages (under the estate’s old ownership) had a spotty track record when it came to longevity. Matthew has embarked on an ambitious plan to correct these mistakes and produce more stable results. His wines are not yet released and although I tasted his delightful Cerbaiona 2012 Brunello di Montalcino at the cellars, he asked me not to publish a review of this upcoming release. He takes inspiration in the late Teobaldo Cappellano of Barolo who also asked wine writers to refrain from scoring his wines. I have honored Matthew’s request in this report although I suppose I could buy a bottle on release and review it sometime in the future (which is exactly what I did last year).
